The weather in Valencia (Spain) in January is typically between 5 and 16 ºC, mostly sunny. The weather is at its coldest for the year, however, the weather is by no means cold and you can still sit outside during the day, even in January. The temperature can drop on an evening, so you should pack some warmer layers and a jacket to wear at night.
